Every fish is handled start to finish in our shop — cut by hand, sealed tight, and frozen hard so it keeps its flavour and texture.

Each fish is filleted by hand — never machine. Fillets, steaks, or whole, prepared the way you want it.

Vacuum Packing

Sealed in high-grade vacuum bags that lock out air and guard against freezer burn, so your fish stays fresh for the long haul.

Flash Freezing

Frozen quickly in our −40 °C freezer. Fast freezing protects texture and flavour far better than a home freezer can.

The smokehouse

Smoked salmon, the way we've always done it

Smoked on site in three styles, each with its own character.

Hot smoked

Rich & flaky

Brined in sugar and salt, then hot-smoked with the skin on and bones in. Ready to eat straight from the pack.

Choose a flavour:

Natural Pepper Garlic Pepper Cajun

Turnaround: about 2 weeks

Cold smoked

Silky & delicate

Cured in a salt brine in our cooler for several days, then smoked low and slow overnight for a smooth, refined finish.

Ask us to slice it into lox and arrange it on a presentation board for your table. Sliced cold smoked can take up to 12 weeks during the busy season.

Turnaround: about 2 weeks

Candied

Sweet & smoky

Deboned and skinned, brined in sugar, then hand-laid on our racks and smoked overnight for a sweet, candy-glazed finish — a West Coast favourite.

Please note: 10 lb minimum. We don't candy filleted fish, and we don't candy pink salmon.

Frozen and on its way — Canada & USA

We pack your order in dry ice and ship with UPS so everything arrives frozen and ready for the freezer.

  • We ship Mondays & TuesdaysFish goes out early in the week so it's never in transit over the weekend.

Please note
  • Once your fish is dropped off, processing takes a 2 week minimum, depending on the type of process, before your order is ready to ship.
  • We can't predict what happens once a package is in transit. If something goes wrong and your fish doesn't arrive frozen, we'll help you through the claim process.
